Ridged griddle

This ridged plate of enamelled cast-iron is placed on one side, over the cast-iron pan supports above two fast burners, in order to grill meat. By having one burner fully on and the other partly on or fully off, a heat gradient can be set up across the plate. This allows you to seal large pieces at the very hot end and to finish cooking or to keep the meat warm on the cooler side.
