A key feature of the cast iron simmer plate is its ability to offer graduated heat zones. By simply moving each pan to the appropriate position, you can simmer or cook fast on the single plate. Gentle simmering on the outward part of the plate is particularly suitable for roasted meats, game, ragouts and hotpots, allowing them to develop their delicate, rich aromas under optimal conditions. Another benefit is the ability to work simultaneously on several recipes and to keep dishes warm on the plate edge. Direct access to the 5 kW flame is obtained by removing the central disc; ideal for fast reduction work and wok cooking.
